Ginkgo Katsu started with a simple idea: a neighborhood restaurant that does one thing extremely well. Not a sushi bar, not a ramen shop, not a Japanese fusion concept. A dedicated katsu specialist.
We named ourselves after the ginkgo tree that stands at the corner of our block. It has been there longer than any of us. Like that tree, we want to be a steady, dependable part of this neighborhood, rooted in Diamond Bar for the long term.
Every cutlet is breaded by hand with fresh panko and fried to order. The bento boxes are generous because our customers are family, not transactions. And our tea drinks are brewed with the same attention as the food, because a great meal deserves a great drink.
